Greek Salad Dressing

Tom and I have greek salad a lot. One of our favourite dinners is grilled chicken with greek salad. It's packed with big chunks of yummy fresh veggies and the dressing isn't too heavy or high in calories. I have always just made my own greek salad dressing- a little vinegar, olive oil and a few spices, but recently I have discovered something that makes it SO much better. 

There are 2 things about greek salad that I love. The feta cheese and the olives. That little spike of salty flavour and different texture makes the salad all the more enjoyable. However, I don't like it when the olives overpower the veg. Enter my new invention- instead of putting the olives into the salad whole, chop them up and put them right in the dressing! That way, I use less salt as I don't have to put any in the dressing and you get a little taste of olive in every bite! YUM!

Miss Tweedle's Greek Salad Dressing (that packs a punch!) 
You need: Vinegar (I use either plain white vinegar or red wine vinegar), olive oil, a jar of Kalamata olives (MUST be Kalamata, not just plain black ones), lemon juice, pepper and oregano.
1. Dump about 8 olives onto a cutting board. Take the pits out by squeezing them between your thumb and forefinger until they split down the middle, then you can just pop the pit out. Chop the olives as finely as you can, almost until they are paste-like. 
2. Put the olives in a small bowl and add about 3 tbsp of vinegar. 

3. Add a splash of lemon juice- about the juice of half a lemon if you have a fresh one around, if not, just use bottled- about 2 tsp. 

4. Add about 1/2 tsp of black pepper and 1 tsp of dried oregano. 

5. Whisk this all together and while whisking, add 3 tbsp of olive oil. 

For the salad- to serve 4 people, use 1/2 cucumber, 1-2 tomatoes, 1 whole bell pepper, 1/4 onion all chopped into chunks about the same size. Add about 1/4 cup of crumbled feta cheese. 

Dump the dressing over it all and enjoy! You'll love the olive-y twist on the traditional greek salad!!
