The Best Pancakes

September 10, 2012

We went on an overnight hiking trip this weekend to a remote cabin. We had to pack all our meals in, but that didn't mean we were only eating trail mix and sanwiches! Our breakfast on Sunday morning was none other than pancakes made from scratch, and the BEST pancakes, at that!

Mr. Tweedle's mother (Mama Tweedle in law) has the best pancake recipe and since trying it, I have never bought pancake mix. It's really easy- full of ingredients you would have in your cupboard, and it tastes SO much better than a mix.

Here's the recipe!

The Best Pancakes

2 cups flour
4 tsp baking powder
2 tbsp sugar
1/2 tsp salt
2 eggs
2 cups milk
1/4 cup of melted butter

Mix it all up and pour them onto a heated frying pan or griddle. Keep the heat at medium-low and flip them when you see bubbles popping up. Enjoy!

Here's the view we arrived to on a HOT September Saturday afternoon!

Tweedle Tip: Always add melted butter or canola oil to pancake batter, whether it is homemade or not. It's the secret to having fluffy pancakes!
