Fresh Homemade Salsa

Mr. Tweedle and I LOVE this salsa. Its the right mix of limey, spicy, cold and tomatoey! I often chop up a batch of it for an after school snack. Our favourite way to eat it is on simple tacos with corn tortillas, chicken and cheese!

Here is what you need- a few of any kind of tomato, 1 jalepeno pepper, any kind of onion, limes and salt. 
Start by slicing the tomatoes in 1/4 inch slices.  
Then cut the slices into matchsticks.
And lastly, cut them into a fine dice.  
Fill a bowl with the chopped tomatoes and add about 3 TBSP of finely diced onions. I use whatever onion I have on hand. I've done it with red, white or green.
Next, finely dice your jalepeno pepper. I scrape all the seeds, but 1/4 of them out. 
Cut them into fine matchsticks and then into a very fine dice. 
Add them into the bowl. 
Lastly, squeeze the juice of 2 limes over the mix and sprinkle in about a tsp of salt. Done!
Try it over a simple taco and you'll be making it all the time!
