Stewed Rhubarb

We did a little freezer overhaul and part of that was finally doing something with a big bag of rhubarb in there. I defrosted it and with some of it made THIS CAKE. (The best rhubarb cake ever!) With the rest of it, I made stewed rhubarb which looks like goo, but tastes delicious!

Start with a big pot of rhubarb and add about 1 cup of water. 

Let it simmer for about 15 minutes until it breaks down and softens up. 

When it looks like baby food, add sugar to taste. Because rhubarb is so sour usually, you will have to add a good 3 cups or so. 

Pop it in jars, or containers and keep it in the fridge or freezer until you need it. You can eat it just like it is as a dessert, or even better, serve it with ice cream!
