The BEST Guacamole

We had an endless supply of guacamole when we visited Mexico last March and luckily, the resort we were at taught all the guests how to make it. Guacamole is a hard thing to perfect because everyone always makes it a little differently. I think the most common mistake people make is that they try to add too many spices, or mayo or sour cream when really, the BEST guac is really simple.

Start with these ingredients. That's ALL you need plus a little salt. 
Take the avocados out of their skins and put them in bowl. 
Chop about 2 TBSP of white onion as finely as you can.  
Chop 2 TBSP of tomatoes very finely as well and add both onion and tomato to the avocado. Squeeze in the juice of one lime. You may need more, but start with one.  
This is the trick! Use a large whisk to mash everything together. I always used a fork before, but the whisk is so much easier and it mashes everything perfectly, leaving a few avocado chunks.  

Sprinkle in about a TSP of salt and mix with a spoon. 
Taste it for salt and lime and voila! There you have the freshest, easiest and BEST guac!
