Aside from a really good, chewy chocolate chip cookie, ginger cookies are my favourite. I really like the ones from Starbucks because they are a little bit chewy and have a good, rich ginger flavour. Somehow whenever I made them at home in the past, I could never get them to stay chewy in the center- they would always turn out crispy no matter how many tricks I tried. However, this recipe rivals the chewy Starbucks version. It even has crystallized ginger in it which really makes these cookies super gingery!

recipe here and this is the second time I have tried it. Both times have turned out great. In fact, I am polishing one of these babies off as we speak!!
Of course, the recipe is originally from the one and only Ina Garten- one of the greats!
