I NEVER thought I would post about vegetarian anything- Mr. Tweedle and I are big meat eaters- but I am not opposed to vegetarian options. I just never think about them all that much! A colleague at work had been raving about her BLT's with tofu "bacon" and she finally made them for us one day and they were shockingly delicious!
Tofu soaks up the flavour of whatever sauce you cook it with, so adding something salty and making it a bit crunchy did the trick to make "bacon" perfectly! I tried to get Mr. T to eat these a little while ago and he refused, so I waited until he was away and dug in for supper one night!
I'll get him one day... I just MIGHT be able to trick him into thinking this is really bacon- it's THAT good!
Tofu is very affordable and good for you. It is high in iron and protein and low in fat. For this recipe, I bought "medium-firm" tofu and sliced 3 thin slices for one sandwich. Put them in a frying pan with a little oil and fry until each side it browned a bit.
When it has browned, add about 2 tbsp of soy sauce into the pan and let the tofu soak up the flavours. Swirl it around in the pan for about 3 minutes until the soy sauce is absorbed.
In the meantime, toast your bread and spread it with mayo. Cut your tomatoes and lettuce.
The final ingredient is Nutritional Yeast Flakes. You can buy these at any health food store and some grocery stores have them too. They are another excellent source of protein and have a salty flavour. Sprinkle about 2 tbsp of these flakes on your tofu and let the pieces crisp up a little more.
When it's all done, assemble your sandwich. Looks tasty, doesn't it!?! The tofu doesn't look like a weird slab of white spongy rubber anymore, does it?! It actually looks appetizing!
