This is one of our favourite pasta dishes and we have it every couple of weeks. Tom is usually in charge of this one, but it isn't hard to prepare. It is more of a method than a recipe, because you can just throw whatever you want into a pot!
You may remember that during the summer, we always grow lots of basil so we can make and freeze homemade Basil Pesto to have all year long. Last year I did Kale Pesto also and it works just as well in this recipe.
We usually put in some kind of sausage- italian or chorizo, zucchini, peppers, garlic, onions and tomatoes- fresh or sundried.
All you do it saute everything and cook the pasta in the meantime. When the pasta is ready, reserve some cooking water and dump it into the saute pan with the veggies and sausage and add your pesto- about 1/2 cup will coat everything. Make sure it's all coated in pesto and add a little extra parmesan cheese, salt and pepper to taste!
