Thai Peanut Sauce

This week I made salad rolls for supper. If you have never tried them, you ought to! They are a nice, light, fresh and delicious meal or snack. They take a little bit of work to prepare, but they're totally worth it. If you didn't know, salad rolls are a Vietnamese dish- rice noodles, cucumber, carrot, cilantro, bean sprouts and shrimp wrapped in rice paper ready to dip in peanut sauce.

Let's face it, the only reason why we eat salad rolls is so we can dip them in the peanut sauce! It really is the main event and I have perfected the art of whipping a nice batch of this stuff up!

Thai Peanut Sauce

3 Tbsp peanut butter
1 1/2 Tbsp soy sauce
1 tsp sesame oil
1 tsp asian hot sauce (siracha or sambal oelek)
Juice of 1 lime
3 Tbsp brown sugar

Combine all ingredients and whisk until smooth!

Enjoy large spoonfuls of this deliciousness on your salad rolls, spring rolls, stir frys, chicken, etc.

I even spooned some right inside my salad roll! YUM!
