Tweedlebud Lisa's 5 Minute Muffins
(or 8 minutes if you are holding a baby and have a toddler clutched to your leg)

August 23, 2013

Tweedlebud Lisa here!

First of all, if you don't have one of these betsy's by now...GO BUY ONE! And leave it on your counter. You will use it daily!! The cheapest time to actually buy of of these if the week before Christmas ($199 instead of $349 +).

First, turn your oven to 350 and line your muffin tin with 12 cupcake liners.

Add your "wet" ingredients into your mixing bowl:

- 4 over ripened bananas
- 1/2 cup of soft or melted butter
- 1 egg

While that is mixing on low/medium speed, blend the following "dry" ingredients into another bowl:

- 1/2 cup sugar
- 1 1/2 cups flour (or gluten free all purpose flour)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt

Then add the dry mixture to the blending wet mixture.

Now you can add 1/2 cup (or freestyle!) of your favourite filling...chocolate chips, blueberries, raspberries, pecans etc.

Spoon the mixture into your muffin tin and bake for 20 minutes!

So quick and easy! Enjoy!

Made them. Added cinnamon, blueberries, and chocolate chips. Delish. Thanks, Lisa!

  2. What temp do you cook them on?

  3. I stuck my batch in oven at 350... worked just fine
