Mama Tweedle-in-Law's
Hot Lunch Brownies

September 09, 2013

Mama Tweedle in Law makes these brownies for dessert on occasion and they are DELICIOUS! You may remember the brownies I posted about in June... these are just as good, but they have icing! Mmmmm...... She calls them Hot Lunch Brownies because she got the recipe way back when she would volunteer to cook for her kids' (Mr. Tweedle's) hot lunch days at school. Nowadays we can't serve yummy things like this is schools due to the Healthy Schools Act. Good thing she snagged this recipe while she could!

Hot Lunch Brownies

1. Combine 1 cup melted butter, 1 cup cocoa, 2 cups white sugar, 4 eggs and 1 1/2 tsp vanilla in a bowl and mix.

2. Add dry ingredients- 1 1/3 cup of flour, 1 tsp baking powder and 1/4 tsp salt and combine thoroughly.

3. Pour into greased 9x13 in. baking dish and bake at 350 for 30 minutes.

When it comes out, it will look like any old chocolate cake/brownie...
While you are letting the brownies cool slightly, make the icing.
Icing- In a bowl, combine 3T melted butter, 1/4 cup cocoa, 1/4 cup milk, 1/2 tsp vanilla and 2 cups icing sugar.

Pour over warm brownies and let it melt across the top of the cake. It will drizzle into the edges and make a nice, thick, smooth layer of icing.

Let cool completely and then slice and serve!
