Roasted Garlic Aioli

September 06, 2013

Aioli is a fancy word for mayonnaise and in restaurants it is always on menus making dishes sound fancier than they are. However, with a GOOD aioli, things do taste much better! Here's how you can make a garlic aioli at home- I use it on my veggie burgers, but you could put this on anything!- Any burgers or sandwiches, eat as a dip with bread or crackers, potatoes... the list goes on!

Start by roasting a whole head of garlic in the oven at 400 for about 45 mins. Drizzle it with olive oil and add salt and a little dried rosemary.
When it's done, you should easily be able to squish the cloves out of the head and mash them with a fork.
All you do, is add the garlic to a big dollop of mayo from your fridge and salt to taste! It's that easy and kicks up any burger!
