Chicken Salad

I admit that this photo doesn't look very appetizing, but I assure you this tasted delicious! Chicken salad is an easy way to use up leftover chicken, or a good thing to make if you want to have a couple days worth of lunches on hand during the week. You can really throw anything in there and it will come together into something yummy!

I don't use a recipe for this, but usually toss in what strikes my fancy at the moment! In this one, there was red pepper, raisins, onion, curry powder, salt, pepper and mayo. 

I have also made a Greek style chicken salad with chicken, cucumber, onion, red pepper, yogurt, lemon juice and oregano, salt and pepper. 

You could do an Asian style with chicken, mayo, hot sauce, soy sauce, green onion, carrot and bean sprouts OR  how about Thai- peanut butter, soy sauce, honey, carrot, green onion and cilantro and chicken?

I have also done Mexican- chicken, beans, tomato, peppers, onion, mayo and taco seasoning (served with tortilla chips). 

Serve it with crackers, pita, on a sandwich, wrapped in lettuce or over a green salad!
