It is the strangest combination of sweet and crunchy and smooth and chewy and yummy. In fact, it was just what the doctor ordered when I was pregnant-sick right about this time last year. I requested that Nana make me my very own batch of the good stuff and it was all I ate for about a week!
Anyway, if you want to join the secret club of people that like jellied salad, then make this. I promise you will like it. It might take you a minute to work yourself up to try it, because it is really weird, but when you do... Mmmmmmmm....
Nana Tweedle's Jellied Salad
1 box lemon jello
1 box lime jello
1 Tbsp lemon juice
1 can crushed pineapple
1 container of cottage cheese
2 stalks of celery
- Dump both boxes of jello into a bowl and add 2 cups of boiling water and the lemon juice. Put it in the fridge and let sit until it starts to gel, about 20 minutes. Keep checking it and stirring it until it is thick but not solid.
- In the meantime, chop up the apple and celery finely.
- When the jello is ready, add the remaining ingredients and mix well. Cover it again and place it in the fridge, this time until it is fully set.
