Butternut Squash Soup

It has been a soup week! I am loving the fact that I can just throw a bunch of things in a pot and call it supper. Especially because Mr. T is back at work leaving me to my own devices with Nora to cook! We had potato soup (from scratch) on Monday, chicken noodle (from a can) on Wednesday and last night it was this super yummy chunky squash soup, recipe courtesy of Jamie Oliver.

I have made this soup a few times and it comes from one of my favourite cook books. But for some reason I have not picked up that book in ages. I had a hankering for this soup the other day and perused through the book and remembered how many good things Jamie Oliver makes!! I need to get back into that book ASAP.

Anyway, the recipe is called "Pumpkin Rice Laksa" and it has a curry flavour to it. It's delish and super to easy to make despite it's fancy sounding name. I had to look up what "laksa" is- a spicy noodle soup. This one is made with rice instead of noodles and I used butternut squash instead of pumpkin.
