Homemade Tortilla Chips

March 10, 2014

I have always had a problem with leftover tortillas. For some reason, I am not a huge fan of using them for lunch wraps. I like good old sandwiches with bread much better. So, whenever we have tacos or quesadillas for supper, there are always unused tortillas taking up space in my fridge and usually, eventually they end up getting thrown out!

I finally tried baking my own tortilla chips and they turned out SO much better than I thought they would! In fact, they are such a "healthened" up version of the kind you buy in the store, I might actually start buying tortillas just to make chips with!

All you do is cut your tortillas in wedges and arrange in a single layer on a baking sheet. Spritz with a little bit of olive oil and sprinkle a tiny bit of salt on them and bake for about 10 mins at 400 or until they start to brown. Let them cool and snack away!

I spread a couple of these babies with Boursin cheese (my FAVOURITE treat) and it was such a tasty afternoon snack. We didn't eat them all in one day, so I just popped them in a ziploc bag and saved them in the cupboard just like any other chips or crackers and they stayed fresh and crispy all weekend!

PS- have you entered the giveaway I am hosting this week?! You could win a custom (made by me!) piece of embroidered name art! Find out how to enter at the bottom of this post!!
