Tweedlebud Megan's Easy Skor Bars

It’s Tweedlebud Megan again and this time I have a not so kid friendly recipe to share. When I was making these my husband asked “who are they for?" I promptly replied “my thighs!”... because really, where else would a bar that’s got 4 ingredients, 3 of which are equal parts butter, brown sugar and chocolate chips end up?! But, they are soooo good. My husband doesn’t really eat many sweets, so I end up baking them and eating them ALL. In the past I’d bake them, but then take them to school to share. Now that I am on mat leave, they are all left for me!! A girl needs a treat every now and then right? These are just perfect!

Here’s the recipe for my simple, and oh so good skor bars!! Enjoy!!

- 1 cup butter
- 1 cup brown sugar
- 1 sleeve of soda crackers
- 1 cup of chocolate chips
- A baking sheet lined with tinfoil

Preheat oven to 375. 

Line baking sheet with tinfoil and lay out soda crackers. Depending on the size of your pan you might need to break a few crackers to fill in the spaces along the end or edge.

In a saucepan over med-high heat combine butter and brown sugar. Bring to a boil, stirring constantly. Once boiling, boil for about 3-4 min. I didn’t get a picture, my assistant was busy putting our toddler back into bed! Ha!

Pour evenly over baking sheet and put into the oven.

Bake for about 5 min until the butter/sugar mixture is bubbling really well.

Remove from oven and sprinkle with the chocolate chips. Let them sit for a few minutes to melt and then spread with a spatula.

Put the pan into the fridge to cool for about 2hrs. 

Break apart, keep refrigerated and enjoy!

I do confess that this particular batch lasted about 3 days....and was 90% consumed by me! GASP!
